• Who Doesn’t Want a Cookie?

    Today was a somewhat stressful day for me. Nothing in particular happened. I just let stuff get the best of me. As I stood in my kitchen, distressed over my lack of attention to the emptying cupboards, I noticed the beautiful persimmons ripening on my counter. I had a recipe for persimmon cookies open on my browser for days and decided to finally take a crack at cooking with this mysterious fruit. And what better way to renew my sense of calm than with the sweet smell of baking.

    Like I said, I’ve never cooked with persimmons before and I was excited to embark on this new adventure in the kitchen. I found a simple recipe on AllRecipes.com.

    I made a few changes, as I always do. Nixed the cloves. Cranberries instead of raisins. I wish I had forgotten the walnuts but I’ve got more fruit so I’ll go that route with the next batch.

    The end result…warm, delicious bites of serenity that I have to share and enjoy.
